1. Kale tofu scramble! A great vegan brunch for a lazy day off. Happy MLK day!

    Ingredients:
    - extra firm tofu, crumbled
    - fresh kale
    - chopped onions
    - diaya cheese
    - a few dashes of turmeric
    - seasoned with salt and pepper
    - toast with vegan margarine

    Tip: Fry up the kale and onions first, since the kale takes a while to soften!
